A project by Dutch businessman Mijndert Pon. Pioneers of the San Pablo Geographical Indication (GI) in the Uco Valley. Its great strength: altitude and closeness to the mountains, a unique terroir for Pinot Noir. Vineyards from 1,200 to 1,700 m above sea level. Executive chef Matías Gil Falcón is in charge of all the food (Espacio Salentein and the San Pablo restaurant – Cocina de Origen). Highlights: an Art Gallery with contemporary Argentine and Dutch art (19th–20th centuries), an underground cellar, a Wine Bar, Espacio Killka (a cultural centre) and Posada Salentein (a pioneer of luxury accommodation in the Uco Valley, with 3 spacious rooms and villas). Sparkling wines from 100% Uco Valley grapes (a cool-climate area par excellence).
